We’re talking about REAL pancakes, not the kind that comes out of a box.   My mother always made pancakes from scratch.  I had never had pancakes from a box mix until I was in my 40’s.  YUCK!  There is no comparison to when you make your own from scratch.  Also, by avoiding the box, you’re avoiding all the chemicals and preservatives that come in that box.   — and most importantly, you are putting LOVE into the food that you prepare for your family and yourself.  You can’t get that from a box!

  • 1-1/2 cups  all-purpose flour
  • 3 tablespoons  granulated sugar
  • 4 teaspoons  baking powder
  • 1/8 teaspoon  salt
  • 1/8 teaspoon  ground allspice
  • 2   eggs
  • 1 cup  milk*
  •  Butter, maple or pancake syrup, confectioners’ sugar, fruit or jam for serving
1.  Heat a griddle or large pan to medium heat.
2. In a large bowl, mix flour, sugar, baking powder and salt.  Add eggs and milk.

3. Pour 1/4 to 1/3 cup batter onto heated griddle or pan.  Cook for 1 minute, or until bubbles in batter pop and remain open. Carefully flip pancakes and cook an additional 30 seconds to 1 minute.

When they’re done, top them with your favorite topping and enjoy!

* I don’t drink cow’s milk, so I use powered milk instead.  It works just as well.
